Current research is finding that dark chocolate is really good for you. It contains polyphenols and, more specifically, flavenols, which may help to maintain a healthy blood pressure and promote heart health. So what better reason do you need for indulging in a little luxury for breakfast? My Belgian Chocolate granola can also be added to yoghurt or ice-cream and fresh fruit berries for a light and easy peasy dessert at the end of the day.

Nuts and Seeds also play a very important in my Granola. Although nuts contain fat, the fat they contain is mostly mono-unsaturated and poly-unsaturated which can help to reduce the risk of heart disease. I list below, in no particular order, the nuts and seeds which I use and why they are so good for us.

Almonds contain fibre, protein needed for healthy cells and cell repair, along with calcium for strong bones. They also contain Vitamin E for healthy skin, inside and out. Almonds contain magnesium, potassium and zinc. Zinc can help to strengthen immunity, magnesium can help your energy levels and potassium can help to reduce blood pressure.

Walnuts contain protein, Vitamins B6 and E, copper, magnesium, potassium, zinc, omega-3 fatty acids. Copper can help to prevent varicose veins. The omega-3 fatty acids in walnuts are very important for heart and skin health.

Cashews are rich in B vitamins, iron, magnesium, manganese, potassium, selenium and zinc. Selenium is great for helping to prevent wrinkles, and give you healthy, shiny hair. Cashews are a great source of omega-6 fatty acids which help to protect against heart disease.

Hazelnuts contain mostly monounsaturated fat, protein and fibre. They are a good source of copper, Vitamin E, Vitamins B1 and B2, calcium, zinc and iron.

Pecan Nuts come from an American tree called Carya illinoensis which is a species of hickory nut. Pecans are a good source of selenium, Vitamin E and niacin (one of the B Vitamins), also Vitamin B1, zinc, protein and is mostly mono-unsaturated fat. The plant sterols and anti-oxidants in pecan nuts have been shown to reduce high cholesterol by oxidizing the bad cholesterol levels.

Pumpkin Seeds are a good source of omega-3 and omega-6 (EFA's) which are great for your skin and hair. EFA's are also very important for your brain, supporting the immune function and decreasing inflammation. Pumpkin seeds also contain calcium and magnesium for supporting bones, muscles and nerves.

Sunflower Seeds contain lots of Vitamin E, omega-6 and monounsaturated fats. The seeds are a good source of magnesium and calcium and also contain zinc and selenium.

Flaxseeds (linseeds) are the best vegetable source of omega-3 EFA's and they also contain omega-6 EFA's which are so essential for your skin, hair, mind, heart and immune system. The seeds also provide magnesium and calcium for your bones and lignans which have anti-carcinogenic properties.

Coconut provides fibre, copper and is a natural sweetener.

Black Treacle contains nearly all the trace elements left after refined sugar is crystallized from sugar cane or beet. It is refined from, and is sweeter than, molasses, the bitter end product of sugar production. It contains calcium and iron, has a rich flavour and adds colour to the product.

Rapeseed Oil is sourced from European production which is, as yet, uncontaminated with GMO varieties common in the USA . Urban myths surround rapeseed oil. It contains erucic acid, which has been shown to be toxic in rats, albeit in high doses. The human toxicity is not established and commercial crops are generally of low erucic acid content anyway. The important thing is that rapeseed is very rich in monounsaturated fat (60%) and is second only to linseed oil as a source of omega 3 EFA.

Fructose is used for sweetness. Fructose has a very low GI (20), but more importantly, is sweeter than ordinary sugar so I have used this sparingly to sweeten the granola. Using fructose, along with the other ingredients, helps to keep the GL of the granola really low, typically 5g - 6g per 50g serving which in turn gives you a good start to the day and helps to keep your blood sugar levels stable throughout the morning.

Agave Syrup is a natural source of fructose. It is the lowest GI natural syrup available. It is made from agave tequilana - the blue agave plant, and as its name suggests tequila is made by fermenting its juices.

Concentrated Apple Juice is used for taste and also adds sweetness and crispness to my organic Granola. Apples are naturally high in fructose which gives apple juice a low glycaemic impact.

Dark chocolate (i.e. 70% chocolate solids). Whilst we have every excuse for eating this kind of chocolate because it just tastes so good it also contains lots of goodies, namely polyphenols. Polyphenols act as anti-oxidants and also contain flavones and it is the flavones which are plant compounds with very good anti-oxidant properties which make dark chocolate such a good ingredient. New research is suggesting that flavones can be responsible for helping the promotion of heart health, good blood flow and healthy blood pressure. If you are at all worried about the fat in chocolate let me explain. Although dark chocolate is approximately 30% fat, the fat which is known as cocoa butter is approximately 35% stearic acid and although saturated does not raise cholesterol levels. Cocoa butter also contains 35% oleic acid which is a monounsaturated fat and has been shown to have a slight cholesterol lowering effect. So let's eat a little dark chocolate every day!

Ginger has very good anti-inflammatory properties so is very beneficial for those with joint problems such as osteo-arthritis. It helps with the general absorption of nutrients and also helps to regulate blood sugar levels. It is also a good anti-oxidant and helps to boost blood circulation and can also be helpful with nausea.

Oligo-fructose sounds rather technical but is in fact a soluble fibre found in lots of vegetables, such as asparagus, leeks, onions, garlic, salsify and artichokes. The chicory root is a very good source of oligofructose, and when it is extracted makes for an ingredient with fibre, a little sweetness and the ability to bind other ingredients together. Another major benefit of using this particular ingredient is its prebiotic quality. Prebiotics help to provide nourishment for the beneficial bacteria in the intestine. This in turn helps the body to absorb more of the beneficial nutrients in food.

Vanilla is extracted from the bean fruit of the tropical orchid Aracus or (Vanilla) aromaticus. It was originally discovered in Mexico in 1571 and only grew in Mexico because pollination could only be effected by a small Mexican bee. After the introduction of artificial pollination in 1820 the main growing regions are now Tahiti and Madagascar . Vanilla extract in a recipe helps to give a round and smooth taste.

Natural Flavours used in my recipes are made solely from the natural parent ingredient and not from synthesized (nature identical) materials.

Lime Juice comes from Sicily as I believe they produce some of the best lime juice in the world. There are several varieties of lime including Citrus aurantifolia, known as Key Lime which is small and yellow and the larger Persian Citrus x latifolia which was introduced to Europe during the time of the Crusades. During the 19th Century limes were issued to British sailors to prevent scurvy, hence the use of the nickname "limey"
